Personally, the way I choose to eat is ‘go natural.’ I ask myself ‘can this food be naturally grown or sourced or can I make it myself’? If the answer is yes then that’s what I choose to put in my body.
There used to be a time in my life when I was dieting and calorie counting that I actually had no knowledge about food, I had no idea what was really good for me. I was more concerned with calorie content and fat content which really didn’t reflect the quality of the food or the goodness it would provide my body.
For example my diet books used to tell me, you can’t eat nuts, eggs, salmon or avocado because there’s too much fat in them, completely neglecting all the positive health benefits. But they would recommend a low fat, low calorie, high sugar microwavable meal with no nutrients at all… crazy!
It took me a while to transition into complete, clean eating but I’m glad I did and as the more time passes the more I learn about different foods and I LOVE it!
I’ve decided to incorporate food into my blog, as we all love food! So I will be sharing some of my favourite recipes and ideas that are simple, delicious and most of all nutritious!
So here’s one of my favourite quick and healthy dinners to try out, Quinoa and Brown Rice Stuffed Peppers With Sweet Potato Chips And Roasted Vine Tomatoes.
It’s really simple.
For the peppers:
1. Boil the quinoa and brown rice. I like to add a stock cube for some added flavour.
2. Cut the peppers in half.
3. When the rice and quinoa are nearly ready, fry some garlic and onion in a pan, I use either olive oil or coconut oil, then sieve the rice and quinoa and add to the pan with garlic and onion for some added flavour. (you can add anything you like here for your favourite flavours)
4.Spoon the mixture into the pepper halves.
5. Roast them in the oven at around 180 for about 25-35 minutes.
For the sweet potato chips.
1.Cut a sweet potato into chips
2.Boil them to soften.
3. Put onto a baking tray with a drizzle of oil (olive, coconut or your preferred choice)
4. Add some cracked pepper and himalayan salt
5. Roast in the oven for around 30 minutes until slightly crisp
Add the vine tomatoes ten minutes before the chips and peppers are ready.
Then all that’s left to do is enjoy!!
